Garlic Chicken Cheese Dish (Print Version)

# Ingredients:

01 - 2 boneless chicken breasts.
02 - 1/2 teaspoon sea salt.
03 - 1/2 teaspoon freshly ground black pepper.
04 - 1/4 cup plain flour.
05 - 2 tablespoons of olive oil.
06 - 3 tablespoons of butter, divided.
07 - 6 minced garlic cloves.
08 - 2 tablespoons of dry sherry (optional).
09 - 3/4 cup chicken stock.
10 - 1 1/4 cups thickened cream.
11 - 1/2 teaspoon Dijon mustard.
12 - 1/2 cup parmesan, finely grated.
13 - Chopped fresh parsley for topping.

# Instructions:

01 - Slice the chicken across its width to make two thinner pieces. Pat them dry with a paper towel.
02 - Sprinkle salt and pepper over the chicken, then lightly cover it in the flour.
03 - Warm up the oil along with a tablespoon of butter in a pan over medium heat. Brown each side of the chicken for 3-4 minutes until golden.
04 - Sauté the garlic in the remaining butter till fragrant, then add the flour leftovers and mix it in.
05 - Pour in the stock and sherry first, then stir in cream, mustard, and parmesan. Let it simmer until it thickens.
06 - Put the chicken back into the sauce, letting it heat for another couple of minutes. Sprinkle parsley on top and enjoy.

# Notes:

01 - Bigger chicken breasts work better here.
02 - Chicken thighs can be used instead, but they'll need 15-20 minutes of cooking.
03 - Sherry can be swapped out for marsala or white wine.
