Bean Brownies (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 can of black beans (15 ounces/425g), washed and dried
02 - 3 big eggs
03 - 3 tbsp of neutral oil, like vegetable or canola
04 - 1 tsp of vanilla

→ Dry Ingredients

05 - ⅔ cup granulated sugar (120g)
06 - ¼ cup cocoa powder without added sugar (30g)
07 - ½ tsp baking powder
08 - ¼ tsp salt
09 - ½ tsp instant coffee or finely ground stuff (optional)

→ Add-ins

10 - ½ cup semi-sweet chocolate chips (60g)

# Instructions:

01 - Set your oven to heat at 350°F (176°C). Toss the black beans into a food processor and blend them till smooth and creamy. Then, mix the puree with the eggs, oil, and vanilla in a big bowl.
02 - Take another bowl and stir together cocoa powder, sugar, baking powder, salt, and coffee if you'd like. Combine this with the wet stuff, then gently fold the chocolate chips in.
03 - Grease an 8x8 or 9x9 inch pan and line it gently with parchment. Pour the batter in and let it bake for 30-40 minutes, watching for edges to be done and the middle to stay just set.
04 - Let the brownies cool completely before slicing them up.

01 - Double the recipe if you're after thicker brownies
02 - It’ll stay fresh in your fridge for a week or so
03 - Feel free to freeze it for up to 3 months
