Golden cheesy appetizer (Print Version)

# Ingredients:

→ Cheese Mix

01 - 1 cup of ricotta (smooth and creamy)
02 - 8 oz of crumbled feta (use the good stuff for better taste!)
03 - Optional: A teaspoon of fresh thyme leaves
04 - Quarter cup of melted butter or olive oil to brush on pastry
05 - 6 phyllo sheets, thawed if frozen, sliced lengthwise

→ Spicy Honey Topping

06 - ¼ cup light honey (try to pick a runny kind)
07 - Red chili flakes, half a teaspoon—or more if you like it hot

# Instructions:

01 - Grab a bowl and toss in the ricotta, crumbled feta, and thyme if you're using it. Stir it up until it’s smooth and the ingredients are all mingled. Let it sit aside for now.
02 - Take the phyllo sheets out, lay them flat, and pop a damp towel over them so they don’t dry out. Slice each one right down the middle lengthwise. You’ll end up with a total of 12 strips.
03 - Fire up your oven to 400°F (200°C) and cover a baking sheet with a sheet of parchment paper.
04 - Lay a strip of phyllo flat. Lightly coat it with melted butter or oil using a brush. Scoop a tablespoon of the cheesy mix near one end. Tuck in the edges and roll it up like a tiny burrito. Place it seam-side down on your lined baking sheet.
05 - Repeat the rolling method with every strip of phyllo until you’re out of filling. Spread them out on the sheet so they don’t touch.
06 - Brush more butter or oil on the tops for good measure. Pop the tray into the oven and bake for 15-20 minutes, or until they’re crispy and golden all over.
07 - As the rolls bake, slowly heat up the honey in a little pan, keeping it on low. Stir in the chili flakes and let them mingle for a couple of minutes. Take it off the heat and set it aside.
08 - Bring out the golden rolls, let them cool just enough to handle, then drizzle on the warm chili honey. You can also serve the honey in a small bowl on the side. Add some extra thyme leaves on top if you like.

# Notes:

01 - Keep phyllo dough under a slightly wet towel to stop it from drying up while you work.
02 - Crank up the heat by using extra chili flakes.
03 - Prep the rolls ahead and let them chill in the fridge until it’s time to bake.
04 - Want a different twist? Swap ricotta with goat or cream cheese!
