01 - 2 big handfuls of baby spinach leaves
02 - 3 to 4 chicken breasts, boneless and skin-free
03 - A cup of orzo pasta
04 - 4 garlic cloves, finely chopped
05 - 1 teaspoon of dried oregano
06 - 1 cup of small cherry tomatoes, cut in half
07 - Juice squeezed from one fresh lemon
08 - 2 tablespoons of good olive oil
09 - Salt and pepper as needed

# Instructions:

01 - Chop the garlic and cut the cherry tomatoes in half. Boil the orzo as directed on its pack.
02 - On medium heat, warm up the olive oil in a big skillet. Cook the chicken breasts, flipping after 6-7 minutes, until they're golden and cooked through.
03 - Toss in the garlic and halved tomatoes, stirring until the aroma fills the air.
04 - Pour the cooked orzo and fresh spinach into the skillet. Stir until the spinach starts to wilt down.
05 - Drizzle lemon juice and sprinkle the oregano over everything. Quickly mix and serve while hot, adding garnish if you'd like.

01 - Toss in some feta crumbles or slices of kalamata olives at the end for an extra kick of flavor.
