Crispy Sweet Heat Chicken (Print Version)

# Ingredients:

01 - 6 cups crushed cornflakes.
02 - 1/4 cup parmesan, finely grated.
03 - 1 teaspoon paprika, smoked.
04 - 1/2 teaspoon onion seasoning.
05 - 1/2 teaspoon garlic seasoning.
06 - 2 large eggs, whisked.
07 - 2 tablespoons spicy hot sauce.
08 - 2 pounds chicken tenders.
09 - Olive oil for topping.
10 - 1/2 cup honey.
11 - 2 1/2 tablespoons spicy hot sauce.
12 - 2 teaspoons cayenne seasoning.
13 - 3/4 teaspoon powdered chipotle chili.
14 - 1/2 teaspoon garlic seasoning.
15 - 1/2 teaspoon onion seasoning.
16 - Sea salt to preference.
17 - Fresh herbs like parsley, thyme, or cilantro as garnish.

# Instructions:

01 - Set the oven to 425°F. Cover the baking tray with parchment paper.
02 - Blitz cornflakes, cheese, paprika, onion powder, garlic powder, and salt in a food processor. Transfer to a bowl.
03 - Combine the beaten eggs and hot sauce in a separate dish. Dunk the chicken pieces in it.
04 - Roll the chicken in the crumb mixture. For a thicker crunch, re-dip in egg and crumbs again.
05 - Lay the chicken on parchment, add a drizzle of oil on top. Bake for 20-25 minutes until golden.
06 - While the chicken cooks, heat all sauce ingredients in a small pan until warm.
07 - Pour the warm sauce over the chicken and finish with chopped herbs.

02 - Microwave the sauce before serving if it gets too thick.
