01 - 1 pound Italian sausage, preferably mild
02 - 1 medium onion, diced
03 - 3 cloves garlic, minced
04 - 2 medium carrots, diced
05 - 2 stalks celery, diced
06 - 4 cups chicken broth
07 - 1 cup heavy cream
08 - 1 cup grated Parmesan cheese
09 - 1 teaspoon dried Italian seasoning
10 - 1 teaspoon salt, to taste
11 - ½ teaspoon black pepper, to taste
12 - 2 cups fresh spinach
13 - 1 cup diced tomatoes, canned or fresh
14 - 1 tablespoon olive oil

# Directions:

01 - In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and cook for about 3-4 minutes, until translucent.
02 - Add the minced garlic and cook for another 1-2 minutes until fragrant.
03 - Remove the sausage from its casing and add it to the pot. Use a wooden spoon to break the sausage into small pieces. Cook until browned and fully cooked, about 5-7 minutes.
04 - Stir in the diced carrots and celery, and cook for an additional 5 minutes until the vegetables start to soften.
05 - Pour in the chicken broth and bring the mixture to a boil. Reduce heat to a simmer and add the diced tomatoes, Italian seasoning, salt, and black pepper. Simmer for 10 minutes.
06 - Slowly pour in the heavy cream, stirring to combine. Bring the soup back to a gentle simmer.
07 - Add the grated Parmesan cheese and stir until melted and well incorporated.
08 - Stir in the fresh spinach and cook for 2-3 minutes until wilted.
09 - Taste and adjust seasoning if necessary. Serve hot with additional Parmesan cheese on top if desired.
