Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets. Season both sides with the prepared seasoning mix.

Heat a large skillet over medium heat and add olive oil. Once hot, cook chicken on each side until golden brown and fully cooked, approximately 4 minutes per side. Remove chicken to a clean plate and cover to keep warm.

In the same skillet, reduce heat to medium-low. Add butter and minced garlic, sautéing for 1 minute until fragrant.

Pour chicken broth into the skillet. Stir in Dijon mustard and Worcestershire sauce, scraping up any brown bits from the bottom of the pan.

Add heavy cream and grated parmesan cheese to the skillet. Stir well and allow the sauce to simmer for 5 minutes. Adjust salt and pepper to taste.

Stir fresh spinach into the sauce, allowing it to wilt in the heat.
