Pat the cod fillets dry with paper towels and season with salt, pepper, and paprika (if using).

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the fillets from the skillet and set aside.

In the same skillet, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes, or until softened and fragrant. Add the roasted red peppers, smoked paprika, and oregano, and cook for another 2 minutes.

Transfer the onion, garlic, and roasted red pepper mixture to a blender or use an immersion blender in the skillet. Blend until smooth. Return the sauce to the skillet.

Add the heavy cream (or coconut cream) and broth to the sauce. Stir to combine and bring to a simmer. Let the sauce cook for 3-4 minutes until slightly thickened. Taste and adjust the seasoning with salt and pepper as needed.

Return the cooked cod fillets to the skillet, spooning some of the sauce over the top of the fish. Let the cod simmer in the sauce for 2-3 minutes to absorb the flavors.

Garnish with fresh parsley and serve the cod with your choice of sides, such as rice, pasta, or steamed vegetables.
