Cod Roasted Red Pepper Sauce (Print Version)

Flaky cod fillets simmered with creamy, smoky roasted red pepper sauce make a bright, comforting main dish.

# Ingredients:

→ For the Cod

01 - 4 cod fillets (about 6 oz each)
02 - 2 tablespoons olive oil
03 - Salt, to taste
04 - Pepper, to taste
05 - 1 teaspoon paprika (optional, for extra flavor)

→ For the Roasted Red Pepper Sauce

06 - 2 roasted red peppers (jarred or homemade)
07 - 1/4 cup onion, finely chopped
08 - 2 cloves garlic, minced
09 - 1/2 cup heavy cream (or coconut cream for a dairy-free version)
10 - 1/4 cup chicken broth (or vegetable broth)
11 - 1 tablespoon olive oil
12 - 1 teaspoon smoked paprika
13 - 1/2 teaspoon dried oregano
14 - Salt, to taste
15 - Pepper, to taste
16 - Fresh parsley, chopped (for garnish)

# Directions:

01 - Pat the cod fillets dry with paper towels and season with salt, pepper, and paprika (if using).
02 - Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the fillets from the skillet and set aside.
03 - In the same skillet, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes, or until softened and fragrant. Add the roasted red peppers, smoked paprika, and oregano, and cook for another 2 minutes.
04 - Transfer the onion, garlic, and roasted red pepper mixture to a blender or use an immersion blender in the skillet. Blend until smooth. Return the sauce to the skillet.
05 - Add the heavy cream (or coconut cream) and broth to the sauce. Stir to combine and bring to a simmer. Let the sauce cook for 3-4 minutes until slightly thickened. Taste and adjust the seasoning with salt and pepper as needed.
06 - Return the cooked cod fillets to the skillet, spooning some of the sauce over the top of the fish. Let the cod simmer in the sauce for 2-3 minutes to absorb the flavors.
07 - Garnish with fresh parsley and serve the cod with your choice of sides, such as rice, pasta, or steamed vegetables.

# Notes:

01 - You can use any white fish fillet, such as halibut or tilapia, in place of cod.
02 - For a more intense flavor, try adding a squeeze of lemon juice to the sauce just before serving.
03 - If you prefer a spicier sauce, add a pinch of red pepper flakes to the roasted red pepper mixture.
