Cinnamon French Toast Muffins (Print Version)

Buttery muffins made with custard-soaked bread cubes and cinnamon sugar. Tastes just like French toast baked into handheld treats!

# Ingredients:

→ Base Mix

01 - 1 teaspoon of cinnamon, ground
02 - 2 teaspoons of vanilla
03 - ¼ cup white sugar
04 - ½ cup of rich cream
05 - 1 full cup of milk (whole)
06 - 4 large eggs
07 - 4 cups of stale bread, cubed into 1-inch pieces

→ Topping

08 - 2 tablespoons of butter, melted
09 - 1 teaspoon fresh cinnamon
10 - ¼ cup sugar

# Directions:

01 - Slice your old bread into small cubes, about 1 inch, and keep it aside for later.
02 - Combine cinnamon, vanilla, sugar, cream, milk, and eggs in a big bowl. Mix well until smooth.
03 - Toss the bread cubes into the custard mix, making sure everything gets coated. Leave them for 10 minutes to soak up the flavors.
04 - Turn your oven to 350°F and grease a muffin tin or use liners.
05 - Spoon the soaked bread into the muffin cups and lightly press them in. Stir together sugar and cinnamon, pour the butter over the muffins, and then sprinkle the cinnamon-sugar mix on top.
06 - Pop them in the oven for 20-25 minutes until they’re golden and firm. Let them cool down in the tin a bit before transferring them to a rack. They’re great warm, especially with maple syrup on top!

# Notes:

01 - Make the mix the evening before to save time in the morning.
02 - Switch up the spices by adding cardamom or nutmeg!
