Cinnamon Cookie Bars (Print Version)

# Ingredients:

→ Bars Base

01 - 1/2 teaspoon salt
02 - 1 teaspoon vanilla extract
03 - 1 teaspoon ground cinnamon
04 - 1 cup unsalted butter, melted
05 - 2 large eggs
06 - 1 1/2 cups granulated sugar
07 - 2 cups all-purpose flour
08 - 2 teaspoons baking powder

→ Cinnamon Sprinkle

09 - 1 teaspoon ground cinnamon
10 - 2 tablespoons granulated sugar

# Instructions:

01 - Turn your oven on to 350°F (175°C). Grab an 8x8 baking dish, line it with parchment, and leave some extra paper hanging over the edges so you can lift the bars out easily after baking.
02 - In a medium-sized bowl, toss together the flour, baking powder, salt, and cinnamon until it's well mixed.
03 - Stir the melted butter with 1 1/2 cups sugar in a larger bowl until smooth. Add the eggs one by one, mixing each in thoroughly before adding the next. Pour in the vanilla and combine.
04 - Add the dry mixture into the wet one a little at a time. Gently fold until everything is just mixed. Spread this into your prepared dish, making sure it's smooth and even.
05 - In a small bowl, combine 2 tablespoons of sugar with your last teaspoon of cinnamon. Evenly sprinkle this all over the batter in the pan.
06 - Pop it into the oven and bake for 25-30 minutes. The edges should look golden, and if you stick a toothpick in the center, it should come out clean or have just a few soft crumbs.
07 - Set the pan on a wire rack and let it completely cool. Once cool, use the parchment overhang to gently lift the bars out. Cut them into squares or rectangles—your call!

# Notes:

01 - Want the top extra crunchy? Stick it under the broiler for a minute or two after baking, but keep a close eye so it doesn’t burn.
02 - You can tweak the cinnamon amounts in the batter or topping if you like it more or less spicy.
03 - Mix a little powdered sugar, milk, and cinnamon together for a sweet drizzle to pour on top just before serving.
04 - Store in a sealed container at room temperature, and they'll stay good for about 3 days.
