Rich Chocolate Cookies (Print Version)

# Ingredients:

01 - 7 ounces (200g) dark chocolate, chopped fine.
02 - ¼ teaspoon regular table salt.
03 - 2 large eggs, at room temperature.
04 - ½ teaspoon baking powder.
05 - ¾ cup (150g) packed light brown sugar.
06 - ¼ cup (25g) unsweetened cocoa powder.
07 - ½ cup (60g) plain flour.
08 - ¼ cup (56g) butter, unsalted.
09 - 1 teaspoon pure vanilla extract.

# Instructions:

01 - Heat oven to 350°F and line trays with parchment paper.
02 - Stir salt, baking powder, cocoa, and flour together in a bowl.
03 - Melt butter and chocolate in the microwave, stirring every 30 seconds until smooth.
04 - Whisk sugar and eggs on high for 5 minutes until thick and pale in color.
05 - Gently fold chocolate mix and vanilla into eggs, then carefully add the dry ingredients.
06 - Put the batter in the fridge for 15 minutes so it thickens up.
07 - Portion and bake in batches for 10-12 minutes, until the tops crack and look shiny.

# Notes:

01 - They taste best while still warm.
02 - Stir in chocolate chips if you'd like.
03 - Batter will be liquid before chilling, that's normal.
