Chocolate Chip Brioches (Print Version)

These soft, buttery pastries feature a light brioche dough packed with creamy vanilla custard and chocolate chips, finished with a sugary glaze.

# Ingredients:

01 - 2 large eggs and another yolk for brushing.
02 - 1/4 cup (50ml) of water.
03 - 2/3 cup (165g) of soft, diced unsalted butter.
04 - A pinch over 1 cup of milk (25cl).
05 - 2 tablespoons (30g) granulated sugar.
06 - 1/4 cup (50g) sugar to make the syrup.
07 - 1 teaspoon cooking butter for the custard.
08 - 3 eggs (150g), pre-beaten.
09 - 1 vanilla bean pod.
10 - 10g (0.35 ounces) fresh yeast, crumbled.
11 - A touch over 2 cups of all-purpose flour (250g) plus a tablespoon extra for good measure.
12 - 3 tablespoons (20g) of cornstarch.
13 - 1/4 cup (50g) sugar for making the custard.
14 - 1 scant teaspoon of fine salt.
15 - 3/4 cup (120g) of tiny chocolate chips.
16 - A tablespoon of additional flour for the custard.

# Directions:

01 - Combine flour, sugar, yeast, and salt in the mixer bowl. Pour in the eggs and mix for 2-3 minutes. Slowly work in the butter chunks and knead for about 20 minutes until the dough becomes smooth and stretchy.
02 - Let your dough sit in a warm space for 2 hours to double in size. Then deflate it, put it in the fridge for 40 minutes, and pop it in the freezer for 20 more minutes.
03 - Warm the milk, butter, and vanilla. In another bowl, whisk yolks with sugar, cornstarch, and flour. Mix both together and cook on low heat until thick.
04 - Roll the dough into an 8x12 inch rectangle. Spread half of it with the cooked custard, sprinkle the chocolate, and fold the other half over. Slice into eight even rectangles.
05 - Cover the shaped pastries and let them puff up for 2 hours in a cozy space.
06 - Give them a nice coat of egg wash. Pop them in a 350°F oven and bake for 10-12 minutes until golden brown.
07 - Prepare syrup by dissolving sugar in a bit of water. Brush the syrup on when brioches come out hot. Cool a bit and enjoy!
