Chickpea Cucumber Feta Salad (Print Version)

Chickpeas, cucumber, and feta with herby lemon dressing for a fresh, filling, and vibrant Mediterranean-inspired meal.

# Ingredients:

01 - 3 cups (440 grams) boiled or canned chickpeas
02 - 170 grams cucumber, peeled and diced into 1 cm pieces
03 - 40 grams red onion, finely chopped
04 - 2 ½ tablespoons dill, minced
05 - 2 teaspoons spearmint, minced
06 - 6 tablespoons extra virgin olive oil
07 - 2 tablespoons fresh lemon juice
08 - ½ lemon, zested
09 - 3-4 teaspoons red wine vinegar
10 - 100 grams feta cheese, crumbled
11 - Salt and pepper, to taste

# Directions:

01 - Add all of the salad ingredients to a bowl and mix thoroughly to combine.
02 - Optionally, leave the salad to marinate in the fridge for about an hour to enhance the flavors.
