Layered Fresh Meal (Print Version)

# Ingredients:

→ Chicken Prep

01 - 1 teaspoon zest from a lime
02 - A pinch of salt and pepper, add as needed
03 - 1/4 cup of your favorite honey
04 - 1 lb chicken breasts, no skin or bones
05 - 2 garlic cloves, finely chopped
06 - 2 tablespoons freshly squeezed lime juice

→ Rice Base

07 - Salt for seasoning (to your liking)
08 - 1/4 cup freshly chopped cilantro
09 - 1 tablespoon lime juice
10 - 1 cup white or brown rice, already cooked

→ Avocado Topping

11 - Salt and black pepper (to your taste)
12 - 2 avocados that are ripe, sliced up
13 - 1 tablespoon lime juice

# Instructions:

01 - Mix lime zest, lime juice, honey, salt, pepper, and minced garlic in a bowl. Toss in the chicken, making sure it's coated. Let it sit for a minimum of 15 minutes to soak up the flavors.
02 - Warm up a skillet or grill on medium-high heat. Cook each chicken breast for about 6 to 7 minutes on both sides, making sure it's fully done on the inside. Let it sit a bit before cutting into slices.
03 - Grab a bowl and mix together the cooked rice, cilantro, lime juice, and a pinch of salt. Stir well so everything's blended.
04 - Put the avocado slices in a bowl and gently coat them with lime juice. Sprinkle on some salt and pepper to stop browning.
05 - Layer the cilantro-lime rice onto a plate first, then add the slices of chicken, and finally top with avocado. If there's leftover honey-lime mix, drizzle it over the top.
06 - Dig in and enjoy this zesty, flavorful chicken and avocado dish right away!

# Notes:

01 - Want it spicy? Toss in a bit of chopped jalapeño or red pepper flakes to the marinade.
02 - It works both warm and cold, so feel free to store it for meal prep.
03 - Bulk it up with extras like black beans or corn to the rice layer.
04 - For extra flavor, marinate the chicken overnight—up to 24 hours in the fridge works great.
