Mashed Potato Bites (Print Version)

# Ingredients:

01 - Two large eggs.
02 - Half a teaspoon of garlic powder.
03 - One cup of cheddar cheese, shredded.
04 - A quarter cup of Parmesan, finely grated.
05 - A quarter cup of milk.
06 - Salt and pepper as you like.
07 - Half a teaspoon of smoked paprika (optional).
08 - Two green onions, finely sliced.
09 - Two cups of mashed potatoes.

# Instructions:

01 - Get your oven ready at 400°F and lightly grease a muffin tray.
02 - Blend together the mashed potatoes, cheeses, eggs, milk, green onions, and seasonings until the mixture is even.
03 - Spoon the mixture into the muffin tray, filling each spot about three-quarters of the way.
04 - Pop it into the oven for 20-25 minutes, or until they’ve firmed up and turned golden.
05 - Take them out and let them sit for a bit before removing from the tray.

# Notes:

01 - Go for starchy potatoes—they’ll work best here.
02 - Toss in some bacon or ham for extra flavor.
03 - A little cheese on top before baking? Yes, please.
04 - Sour cream makes a great dip for these.
05 - Grease your tray well or they might stick.
