Set the oven to preheat and bake the tater tots according to the box directions. Cook them till they're crispy and golden brown.

Use a skillet on medium heat to brown the ground beef. Sprinkle some salt and pepper in as it cooks. When it’s done, drain any leftover fat.

In a big bowl, mix together the cooked ground beef, slightly broken-up tater tots, half the cheddar cheese, and half the Monterey Jack cheese. Stir until it's all blended nicely.

Heat the flour tortillas for around 10-15 seconds in the microwave or toss them on a dry skillet. This helps soften them so they’re easier to work with.

Spoon the filling into the center of each softened tortilla. Drizzle on some of that chipotle sauce and add a little sour cream on top.

Close the sides of the tortilla over the filling. Then tuck up the bottom and roll it tightly to shape your burrito.

Place the burritos in an oven-safe dish and scatter the remaining shredded cheese all over the tops. Bake them for 5 to 10 minutes, or until the cheese is melted and bubbling.

Take the burritos out of the oven. If you like, top them with cilantro, tomatoes, and green onions. Serve them warm with extra sour cream and chipotle sauce on the side.
