Beef & Cheese Quesadilla (Print Version)

# Ingredients:

→ Filling

01 - 1 pound of ground beef
02 - 1 small onion, diced finely
03 - 2 garlic cloves, minced
04 - A teaspoon of ground cumin
05 - A teaspoon of chili powder
06 - Half a teaspoon of smoked paprika
07 - Half a teaspoon of oregano
08 - Salt and black pepper to your liking
09 - 1/4 cup of salsa or pasta sauce (optional)

→ Assembly

10 - 4 big flour tortillas
11 - 2 cups of shredded cheese (Mexican blend, Monterey Jack, or cheddar)
12 - Chopped fresh cilantro, 2 tablespoons (optional)
13 - Oil or butter for pan-frying

# Instructions:

01 - In a wide pan over medium heat, brown the ground beef. Toss in the onion and garlic. Let them cook until soft and fragrant.
02 - Mix in the chili powder, cumin, oregano, smoked paprika, salt, and pepper. If you’d like, stir in some salsa or tomato sauce to make it saucy. Let it gently cook for 2-3 minutes, then take it off the heat. Sprinkle in some cilantro if you’re using it.
03 - Warm a clean frying pan over medium heat. Place a tortilla in the pan. Spread some cheese on one half, pile the beef mixture on top, then finish with another layer of cheese. Fold it closed.
04 - Cook each side for 2-3 minutes until it’s crispy and golden, and the cheese has melted nicely. Continue with the rest of the tortillas.
05 - Slice it into wedges and serve while it’s still hot. You can add toppings like guacamole, sour cream, or extra salsa if you want.

# Notes:

01 - You can change up the cheese blend to fit your taste
02 - Add salsa or a bit of sauce to keep it from being dry
03 - A great way to use up leftover cooked beef
