Baked Cheesy Squash (Print Version)

# Ingredients:

→ Vegetables

01 - 2 medium yellow squash, cut into 1/4-inch-thick slices

→ Cheese & Breading

02 - 1/4 cup breadcrumbs
03 - 1/4 cup Parmesan cheese (grated)
04 - 1 cup cheddar cheese (shredded)

→ Seasonings & Oil

05 - 1 teaspoon basil (dried)
06 - 1 teaspoon oregano (dried)
07 - A pinch of salt and pepper to your taste
08 - 2 tablespoons olive oil

# Instructions:

01 - Turn your oven to 375°F (190°C) and line a baking tray with parchment paper
02 - Mix together the breadcrumbs, grated Parmesan, oregano, basil, salt, and pepper in a bowl
03 - Use a brush to spread olive oil on both sides of every squash slice, then cover them in the breadcrumb mixture
04 - Put the slices on the baking tray, making sure they don’t overlap. Sprinkle the shredded cheddar evenly on top
05 - Pop it into the oven and bake for 20 to 25 minutes until the cheese gets all bubbly, golden, and melted
06 - Give it a couple of minutes to cool down before serving while still warm

01 - This is perfect as a starter or a side!
02 - You can replace the yellow squash with zucchini if preferred
