Turn your oven to 375°F (190°C) and line a baking tray with parchment paper

Mix together the breadcrumbs, grated Parmesan, oregano, basil, salt, and pepper in a bowl

Use a brush to spread olive oil on both sides of every squash slice, then cover them in the breadcrumb mixture

Put the slices on the baking tray, making sure they don’t overlap. Sprinkle the shredded cheddar evenly on top

Pop it into the oven and bake for 20 to 25 minutes until the cheese gets all bubbly, golden, and melted

Give it a couple of minutes to cool down before serving while still warm
