Rich Cheesy Pasta (Print Version)

# Ingredients:

01 - 1½ cups panko breadcrumbs.
02 - 4 cups cheddar cheese, sharp.
03 - 3 cups whole milk.
04 - 2 cups Gruyere cheese.
05 - 16 oz elbow pasta noodles.
06 - 1 tbsp olive oil.
07 - ⅓ cup plain flour.
08 - Salt and pepper for seasoning.
09 - 6 tbsp unsalted butter, softened.
10 - 4 tbsp butter, melted.
11 - ½ cup Parmesan, grated.
12 - ¼ tsp smoked paprika powder.
13 - 1 cup heavy cream, cold.

# Instructions:

01 - Set oven to 350°F and grease your baking dish ahead of time.
02 - Boil the pasta but stop a little before it's fully done, then drain and coat with oil.
03 - Get your butter melted, then whisk in flour until it gets a light tan color.
04 - Pour in the milk and cream slowly, stirring as it starts to bubble up.
05 - Stir in the cheeses until everything’s melted smoothly.
06 - Combine the sauce with the cooked pasta.
07 - Add half of the pasta mixture to the dish, sprinkle cheese over it, then top with the rest of the pasta.
08 - In a bowl, mix breadcrumbs, paprika, Parmesan, and melted butter.
09 - Spread the crumb mix evenly over the layered pasta.
10 - Pop it in the oven for half an hour, or until the top gets that golden color.

# Notes:

01 - Freshly shredded cheese melts much better.
02 - For extra flavor, try adding a dash of mustard or hot sauce.
