Set your oven to 180°C (350°F) for fan or bump it up to 200°C (390°F) if not using a fan.

Pour a tablespoon of honey evenly across each pastry square.

Scatter walnuts, blue cheese, Parmesan, thyme, pepper, and salt across both sheets. Spread it out so the toppings are even.

Take each sheet and roll it tightly from one side to the other.

Cut each rolled pastry lengthwise into two long strips.

Take each strip, twist it up, and make little spirals or coils.

Line a tray with parchment and place your coils on it.

Use a brush to paint each coil with milk.

Put your tray in the oven and bake for 25 to 30 minutes, or until the pastries puff up and look golden.

Sprinkle some fresh thyme on top and enjoy while warm.
