Savory Cheese Pastry Coils (Print Version)

Crisp puff pastry filled with tangy cheese, crunchy walnuts, and thyme. Fancy yet simple for any gathering.

# Ingredients:

01 - Two square puff pastry sheets.
02 - 2 tbsp of honey.
03 - 100g crumbled blue cheese.
04 - 100g freshly grated Parmesan.
05 - 50g of roughly chopped walnuts.
06 - 6-8 small sprigs of fresh thyme.
07 - 1 tbsp milk.
08 - Pinch of sea salt.
09 - Freshly cracked black pepper.

# Directions:

01 - Set your oven to 180°C (350°F) for fan or bump it up to 200°C (390°F) if not using a fan.
02 - Pour a tablespoon of honey evenly across each pastry square.
03 - Scatter walnuts, blue cheese, Parmesan, thyme, pepper, and salt across both sheets. Spread it out so the toppings are even.
04 - Take each sheet and roll it tightly from one side to the other.
05 - Cut each rolled pastry lengthwise into two long strips.
06 - Take each strip, twist it up, and make little spirals or coils.
07 - Line a tray with parchment and place your coils on it.
08 - Use a brush to paint each coil with milk.
09 - Put your tray in the oven and bake for 25 to 30 minutes, or until the pastries puff up and look golden.
10 - Sprinkle some fresh thyme on top and enjoy while warm.

# Notes:

01 - Keep your pastry chilled right until you work with it to help it puff properly.
02 - If some toppings fall out after cutting, just tuck them back in.
03 - This tastes best while it's still warm.
