Carrot Bars with Frosting (Print Version)

Soft, spiced carrot bars covered in smooth cream cheese frosting. Made with juicy pineapple and grated carrots for tons of flavor.

# Ingredients:

→ Dry Items

01 - 1 teaspoon baking soda
02 - 1/2 teaspoon of salt
03 - 1/2 teaspoon each of ground ginger and nutmeg
04 - 1 cup, plus 1 teaspoon, all-purpose flour
05 - 1 1/2 teaspoons of baking powder
06 - 1 teaspoon of cinnamon

→ Moist Ingredients

07 - Three large eggs
08 - 1 teaspoon vanilla extract
09 - Half a cup of soft, unsalted butter
10 - 1 cup of sugar and 1/2 cup of brown sugar
11 - Two cups of shredded carrot
12 - Chopped walnuts (optional, 1/2 cup)
13 - Drained pineapple, 1/2 a cup crushed

→ Topping - Cream Cheese

14 - Softened cream cheese, 8 oz
15 - 1/4 cup slightly softened butter
16 - 1 teaspoon of vanilla
17 - Powdered sugar, 2 cups

# Directions:

01 - Heat the oven to 350°F. Butter and dust your 9x13 pan with flour.
02 - In one bowl, whisk cinnamon, nutmeg, ginger, salt, soda, flour, and baking powder together.
03 - Cream the butter with the sugars until fluffy. Add each egg one by one. Stir in vanilla, then dry mix. Finally, fold in carrots, pineapple, and walnuts.
04 - Fill the baking dish with the batter and bake 30-35 minutes. Let it cool all the way before frosting.
05 - Blend cream cheese and butter together until smooth. Add powdered sugar and vanilla. Spread this over the cooled cake.

# Notes:

01 - Make sure your butter and cream cheese are soft and at room temp.
02 - Well-drained pineapple keeps the batter from being too wet.
