Candied Yams Southern (Print Version)

# Ingredients:

01 - 1 stick of butter, softened.
02 - 2 tbsp of vanilla extract.
03 - 2 lbs peeled sweet potatoes.
04 - 1 cup of granulated sugar.
05 - 3/4 cup of brown sugar, light or dark.
06 - 2 tsp ground cinnamon.
07 - 1 tsp ground nutmeg.
08 - 1/4 tsp of ginger powder.
09 - 1/4 tsp table salt.
10 - 4 tbsp of thawed orange juice concentrate.

# Instructions:

01 - Peel your sweet potatoes, rinse them, and cut into 1/2-inch thick slices.
02 - Put everything into a medium pot and set it over medium heat.
03 - Give the potatoes a good stir to coat them in the buttery sugary sauce.
04 - Let it come to a boil, cover it up, and simmer for about 50 minutes till they're nice and soft.
05 - Take the lid off and turn heat to medium.
06 - Let it boil for 10 minutes while stirring here and there until the sauce gets thicker.
07 - Leave them in a warm oven until you're ready to dig in.

# Notes:

01 - Make it up to three days ahead of time.
02 - Go for smaller sweet potatoes to save time.
03 - Adjust the sugar if you want it less sweet.
04 - Handle carefully to avoid breaking them apart.
