Cajun Spiced Soup (Print Version)

# Ingredients:

→ Sausage

01 - 1 spoon of vegetable oil
02 - 1 piece (13.5 ounces) of andouille sausage

→ Vegetables

03 - 1 big onion, chopped up
04 - ½ cup celery, diced
05 - ½ red bell pepper, chopped finely
06 - 2 teaspoons of garlic, minced
07 - 4 medium russet potatoes, peeled and cut into chunks

→ Seasonings and Liquids

08 - 1 teaspoon of Cajun seasoning
09 - ½ teaspoon kosher salt
10 - ½ teaspoon ground black pepper
11 - ½ teaspoon paprika
12 - ¼ teaspoon cayenne
13 - 4 cups of chicken broth
14 - ½ a cup of heavy cream
15 - 1 cup shredded mild cheddar cheese

# Instructions:

01 - Heat up the veggie oil and brown the sausage slices for about 3-4 minutes. Take them out and put aside.
02 - Toss the onion, celery, and bell pepper into the same pot and cook until they soften up. Quickly add in the garlic.
03 - Mix in the spices, broth, and cubed potatoes. Let it cook on a low boil for 20-25 minutes—or until the potatoes are soft.
04 - Stir the sausage back in, then pour in the cream and toss in the shredded cheese. Let it all heat together for 5 minutes until the cheese melts completely.

02 - This recipe uses russet potatoes
