Buttery Spinach Cheese Puffs (Print Version)

# Ingredients:

01 - 4 ounces cream cheese, softened
02 - 1 large egg
03 - 1 tablespoon olive oil
04 - ½ teaspoon dried dill
05 - 2 cups fresh spinach, chopped and packed
06 - ¾ cup crumbled feta
07 - 2 teaspoons bacon bits
08 - Salt, to taste
09 - Pepper, to taste
10 - 1 sheet frozen puff pastry, thawed
11 - 1 tablespoon melted butter

# Directions:

01 - Spray 9 cups in a muffin pan with cooking spray.
02 - Microwave cream cheese 10 seconds at a time until softened and melted but not steaming. Add egg, olive oil, and dried dill, then mix until well combined.
03 - In a separate bowl, combine chopped spinach, crumbled feta, and bacon bits. Add the cream cheese mixture on top, season with salt and pepper, and mix with a fork until incorporated.
04 - Cut the puff pastry sheet into 9 squares. Stretch the pastry slightly if needed, then line each muffin cup with a pastry square, pressing it into the bottom of the cups.
05 - Evenly divide the spinach filling among the prepared muffin cups. Bring the four corners of each pastry square together at the top to cover the filling, and press them together lightly.
06 - Lightly brush the tops of the pastry with melted butter.
07 - Bake at 400°F (200°C) for about 20 minutes until the pastries are golden and puffy. Let cool for 10 minutes, then use a knife to loosen and release each puff from the pan.
