BLT Chicken Salad (Print Version)

# Ingredients:

→ Salad Mix

01 - 1 pound crispy, cooked bacon, cut into small bits
02 - 3 cups chicken, cooked and diced
03 - 2 stalks of celery, finely chopped
04 - 1/2 red onion, finely diced
05 - 1 cup halved cherry tomatoes

→ Creamy Dressing

06 - 1/4 teaspoon ground black pepper
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon onion powder
09 - 1 tablespoon fresh lemon juice
10 - 1/2 teaspoon salt
11 - 1/2 cup light mayonnaise

# Instructions:

01 - In a big bowl, toss together the chicken, bacon, tomatoes, celery, and red onion.
02 - Take a small bowl, stir the mayo, lemon juice, salt, garlic powder, onion powder, and pepper together until smooth.
03 - Drizzle the dressing on your chicken mixture. Gently stir until all the pieces are evenly coated.
04 - Eat right away or put it in the fridge for about an hour to let the flavors blend perfectly.

# Notes:

01 - Shredded rotisserie chicken works great, or boil chicken breasts and shred them once fully cooked.
02 - Feel free to tweak salt or other seasonings to your preference.
03 - This dish lasts up to 3 days in the fridge if kept in a sealed container.
04 - Enjoy it on lettuce, as a sandwich filling, or even stuffed in an avocado.
