BBQ Ranch Turkey Skillet (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound of ground turkey (organic preferred)
02 - 1 tablespoon of coconut oil
03 - 1 large sweet potato (16 ounces), cut into 1/2-inch cubes
04 - 2 cups (10 ounces) of Brussels sprouts, halved or quartered
05 - 1 medium zucchini, sliced into semi-circles
06 - 2 cups (8 ounces) of baby bella mushrooms, sliced
07 - 1 yellow onion, finely chopped
08 - 4-6 minced garlic cloves

→ Extras for Flavor

09 - 1/3 cup of BBQ sauce
10 - 1/2 cup of ranch dressing
11 - 1/4 cup of golden raisins (optional)

→ Optional Garnishes

12 - Sliced avocado
13 - Chopped fresh cilantro
14 - Wedges of lime
15 - Green onions, thinly sliced
16 - Grated cheese of your choice

# Instructions:

01 - In a small bowl, stir together the BBQ sauce and ranch dressing. Set it aside for later.
02 - Use a 12-inch skillet on medium heat to cook the turkey until browned. Remove it from the skillet and keep it aside.
03 - Melt some cooking oil in the skillet, then add your sweet potato cubes. Cook for about 10 minutes, stirring once in a while.
04 - Add the Brussels sprouts and keep stirring for another 5 minutes.
05 - Toss in the zucchini, mushrooms, onion, and garlic. Cook everything for 8-10 minutes, or until the veggies become soft and cooked through.
06 - Put the cooked turkey back into the skillet. Stir in the BBQ ranch mixture and the optional raisins. Let everything heat up together for 3-4 minutes. Serve with the toppings of your choice.
