Switch on your oven and set it to 400°F (200°C). Get a 9x13-inch baking dish, spritz it with some cooking spray, and place it aside.

In a frying pan or skillet, heat up the olive oil over medium-high heat. Once it's hot, throw in the chicken pieces and cook them until they're crispy and golden on the outside.

Stir in minced garlic and let it cook for a minute until you can really smell it. Pour in BBQ sauce and toss in a pinch of salt (about half a teaspoon). Let it simmer until it thickens a bit, and every bite of chicken is coated in sauce. Then, take it off the heat.

Set your taco shells in the baking dish you prepped earlier. Add about 1-2 tablespoons of shredded mozzarella to the bottom of each taco. This keeps them from getting soft and falling apart.

Scoop 2-3 tablespoons of the BBQ chicken mixture into each taco shell, layering it over the cheese. Use up all the chicken evenly across the tacos.

Sprinkle your tacos with the sliced bell pepper, onion pieces, mushroom slices, and olives. Top them with the rest of the shredded cheese and a dash of Italian seasoning or pizza herbs.

Pop the dish into your oven and bake for about 15 minutes. You'll know it's done when the cheese is fully melted and just a little browned.

Take the tacos out of the oven and serve them up while they're still hot. You can also add extras like guacamole, creamy sour cream, salsa, or whatever toppings you like.
