BBQ Cheese Toastie (Print Version)

# Ingredients:

→ For the Sandwich

01 - 2 cups shredded, cooked chicken (rotisserie chicken is a great choice)
02 - 1/2 cup BBQ sauce, with a little extra for drizzling if you'd like
03 - 8 slices of sourdough bread (or your favorite kind)
04 - 8 slices of cheddar cheese (or use a mix of cheddar and mozzarella if you prefer)
05 - Thinly sliced red onion, about half a medium one
06 - 2 tablespoons butter, softened
07 - Optional extras: cilantro leaves or pickled jalapeños

# Instructions:

01 - Take a medium-sized bowl and stir the shredded chicken together with the BBQ sauce. Add more sauce if you're into saucier sandwiches.
02 - Start with 4 slices of bread. Put a slice of cheese on each piece, then pile on a quarter of the chicken mixture, some red onion slices, and any other toppings if you're using them. Add a second slice of cheese on top and finish with another slice of bread.
03 - Spread the softened butter on the outside of each sandwich. Make sure both top and bottom slices get a full coating of butter.
04 - Warm up a big skillet on medium heat. Lay the sandwiches in the pan with the buttered side touching the pan. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip them. Cook another 3-4 minutes, gently pressing each sandwich so they cook evenly and the cheese gets nice and gooey.
05 - Give the sandwiches a minute to cool slightly, then slice them in half. Serve right away, maybe with a little extra BBQ sauce drizzled on top if you're feeling fancy.
