Take a medium-sized bowl and stir the shredded chicken together with the BBQ sauce. Add more sauce if you're into saucier sandwiches.

Start with 4 slices of bread. Put a slice of cheese on each piece, then pile on a quarter of the chicken mixture, some red onion slices, and any other toppings if you're using them. Add a second slice of cheese on top and finish with another slice of bread.

Spread the softened butter on the outside of each sandwich. Make sure both top and bottom slices get a full coating of butter.

Warm up a big skillet on medium heat. Lay the sandwiches in the pan with the buttered side touching the pan. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip them. Cook another 3-4 minutes, gently pressing each sandwich so they cook evenly and the cheese gets nice and gooey.

Give the sandwiches a minute to cool slightly, then slice them in half. Serve right away, maybe with a little extra BBQ sauce drizzled on top if you're feeling fancy.
