BBQ Chicken Grilled Cheese Sandwich (Print Version)

Barbecue chicken, melty Havarti, and garlicky buttered bread join for a crispy, flavorful handheld meal.

# Ingredients:

→ BBQ Chicken

01 - 2 tablespoons olive oil
02 - 1 small red onion, thinly sliced
03 - 3 cloves garlic, minced
04 - 2 ½ cups shredded roasted chicken
05 - ½ teaspoon paprika
06 - 1 teaspoon Worcestershire sauce
07 - 1 cup BBQ sauce
08 - 12 slices Havarti cheese

→ Garlic Butter Bread

09 - ¼ cup butter
10 - 2 cloves garlic, minced
11 - 2 teaspoons parsley, minced
12 - 12 slices sourdough bread or sturdy white bread

# Directions:

01 - Heat olive oil in a large skillet over medium heat. Cook onions until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Add shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir to combine and cook until heated through, approximately 2-3 minutes.
02 - In a medium bowl, combine butter, garlic, and minced parsley. Microwave until melted.
03 - Lay 12 slices of bread on a work surface. Spread melted butter mixture over each slice. Turn over the bread slices and layer 6 of them with 6 slices of cheese, dividing the BBQ chicken mixture evenly. Place another slice of cheese on top of the chicken before covering with the remaining bread slices, buttered side facing out.
04 - Place the assembled sandwiches in a large non-stick skillet over medium heat. Cook until the bottoms are browned, about 3-5 minutes. Flip the sandwiches, reduce heat to medium-low, and cook until the opposite side is browned and the cheese is melted, another 3-5 minutes.
