13 - 2 egg yolks (Bavarian cream).
14 - 1/2 cup heavy cream (Bavarian cream).
15 - 2 tablespoons sugar (Bavarian cream).
16 - 3/4 teaspoon vanilla flavoring (Bavarian cream).
17 - 1/4 teaspoon banana flavoring (Bavarian cream).
18 - 2/3 cup chilled heavy cream (Bavarian cream).
19 - 5 tablespoons powdered sugar (Bavarian cream).
20 - 1/2 cup whipped heavy cream (topping).
21 - 1/4 cup powdered sugar (topping).
22 - 1/2 teaspoon vanilla essence (topping).
23 - Fresh banana slices (topping).

# Instructions:

01 - Warm your oven to 325°F. Combine the cookie crumbs, butter, and sugar in a bowl. Press it into the bottom of a 9-inch springform pan, then let it bake for 10 minutes. Let it cool and wrap the pan exterior with foil to prepare for a water bath.
02 - Set the oven down to 300°F. Using a large mixing bowl, beat together the cream cheese, sugar, and flour until smooth. Add sour cream, mashed banana, and banana extract. Mix gently. Add the eggs one after another, blending as you go.
03 - Pour your cheesecake mixture into the crust. Take a bigger pan, place the springform pan inside, and fill it with hot water until it reaches halfway up the sides. Bake for 1 hour and 30 minutes.
04 - Turn off the oven and let the cheesecake rest inside with the door shut for 30 minutes. Then, pop the door slightly open and leave it there for an extra half hour. Finally, remove it from the oven and completely cool it down.
05 - For the creamy layer, sprinkle gelatin over the milk and set it aside to absorb (bloom). Warm the cream, sugar, and both extracts in a small pot until it's heated. Mix this warm mix slowly into the egg yolks and heat again until it thickens up.
06 - Blend the bloomed gelatin into the cream mixture. Place this over an ice bath to chill down. Once it's cooler, fold in whipped cream made of chilled heavy cream and powdered sugar.
07 - Spoon the Bavarian cream evenly on top of the cold cheesecake. Let it set in the fridge for around 5 to 6 hours.
08 - Using a mixer, beat together the heavy cream, powdered sugar, and vanilla for the topping. Pipe it on the cheesecake, then decorate with fresh banana slices before serving.
