Cover a pair of baking sheets with some parchment paper.

Peel those sweet potatoes and slice them into 1/4-inch-thick sticks.

Spread the cut potatoes onto the two trays.

Sprinkle over each pan: 1 1/2 teaspoons of cornstarch and 1/4 teaspoon salt.

Pour 1 tablespoon of oil onto each tray and toss everything until coated evenly.

Arrange the fries in one layer, making sure they don't touch or pile up.
