# Ingredients:

01 - 2 tablespoons olive oil (extra-virgin).
02 - Half a teaspoon of fine sea salt.
03 - 2-3 medium-sized sweet potatoes (about 2 pounds).
04 - 1 tablespoon cornstarch.
05 - Optional toppings: A pinch of garlic powder.
06 - Optional toppings: A dash of cayenne.
07 - Optional toppings: Ground black pepper to taste.

# Directions:

01 - Set your oven to 425°F and adjust the racks to the upper and lower parts of the oven.
02 - Cover a pair of baking sheets with some parchment paper.
03 - Peel those sweet potatoes and slice them into 1/4-inch-thick sticks.
04 - Spread the cut potatoes onto the two trays.
05 - Sprinkle over each pan: 1 1/2 teaspoons of cornstarch and 1/4 teaspoon salt.
06 - Pour 1 tablespoon of oil onto each tray and toss everything until coated evenly.
07 - Arrange the fries in one layer, making sure they don't touch or pile up.
08 - Bake for 20 minutes, then turn the fries over.
09 - Swap the trays' positions in the oven, and keep baking for another 10-18 minutes until crunchy.
10 - Sprinkle on your favorite seasonings after baking.

# Notes:

01 - Spread the fries out—no overlapping—so they'll get crispy.
02 - Making your fries the same size helps them cook evenly.
03 - You can peel and cut the potatoes up to 2 days in advance and store them in water.
04 - Pop them back in the oven to crisp them up again when reheating.
