Avocado Mango Arugula Salad (Print Version)

Creamy avocado and sweet mango with arugula and toasted pine nuts, drizzled in vibrant honey-lime dressing.

# Ingredients:

→ Dressing

01 - 3 tablespoons freshly squeezed lime juice
02 - 1/4 cup extra virgin olive oil
03 - 2 tablespoons honey
04 - Salt and pepper to taste

→ Salad

05 - 5 oz arugula
06 - 1 ripe mango, peeled, pit removed, diced into bite-sized pieces
07 - 1 avocado, peeled, cored, and diced
08 - 1/4 cup red onions, thinly sliced
09 - 1/3 cup pine nuts, toasted

# Directions:

01 - In a medium, high-sided bowl, or mason jar, combine lime juice, olive oil, and honey. Whisk with a fork until emulsified.
02 - In a large serving bowl, combine arugula, diced mango, diced avocado, and red onions.
03 - Drizzle with the dressing (you don't have to use the whole amount) and toss to combine. Top with toasted pine nuts. Season with salt and pepper, if desired.
04 - Preheat oven to 350°F (177°C). Spread pine nuts on a baking sheet in a single layer and roast for about 5 minutes until they turn golden. Watch closely to prevent burning.
