Sweet Apple Hand Pies (Print Version)

# Ingredients:

01 - 5 peeled honeycrisp apples, chopped into chunks.
02 - 3/4 cup of piloncillo, or swap in brown sugar if needed.
03 - 1 tablespoon of fresh lemon juice.
04 - 1 teaspoon pure vanilla.
05 - 1/4 teaspoon ground cinnamon powder.
06 - 1/8 teaspoon of cloves spice.
07 - 3 cups regular flour.
08 - 1/2 cup white sugar.
09 - 1 small pinch of kosher salt.
10 - 1 cup chilled butter, cubed.
11 - 2 big eggs.
12 - 2 tablespoons icy water.
13 - 1 egg white, for brushing.
14 - 4 tablespoons raw turbinado sugar.

# Instructions:

01 - Mix apples, piloncillo, vanilla, lemon juice, cinnamon, and cloves in a pan. Cook on medium heat for 15-20 minutes until softened.
02 - Blend flour, sugar, salt, butter, eggs, and water until it turns into dough. Shape into a ball, then split into 16 equal parts.
03 - Roll out each piece into 6-7 inch circles. Stack them with parchment between and refrigerate for half an hour.
04 - Spoon 2½ tablespoons of the filling onto every circle. Fold over and press edges to seal tight.
05 - Cut small openings in the tops, brush with egg white, then sprinkle sugar. Bake at 375°F for 25-30 minutes until golden brown.

# Notes:

01 - Filling stays good in the fridge for up to a week.
02 - Freeze the dough circles and store them for a month.
03 - You can opt for pre-made empanada dough from the store.
